I spent a great Xmas on the islands once.  I suppose San Juan del Sur or Granada have the greatest chance of seeming festive.  No matter where you are that day the transportation will be more difficult (fewer/no buses) so don't count on being able to travel from point A to point B very easily on the 25th.  How about hiking Mombacho (outside Granada) on that day, for the cool air?  Or kayak the Isletas or something (arrange in advance) so you can look back on the 25th with nice memories?

I spent Christmas 2008 at San Juan del Sur.  Actually, Christmas there is almost the entire month of December, particularly the Immaculate Conception festivities around December 8.  The actual day, December 25, may be relatively quiet, as most people are home with their families.  It's certainly festive, and you'll see Christmas trees and hear Christmas music (as well as a staggering volume of fireworks almost around the clock.) To me, Christmas under a shimmering blue sky at 32 degrees Celsius, on a Pacific Beach, is a great experience, but it's not Christmas the way I've always experienced it.  Best you find something good to do that day.
Actually, Easter is the main holiday in Central America.
